Ingredients:

Green Pepper (sweet, cored, seeded and cut into 1/2-inch wide strips)

Sweet Red Pepper (cored, seeded and cut into 1/2-inch wide strips)

Cucumber (peeled, seeded and cut into 1/2-inch wide pieces)

Plum Tomatoes (seeded and cut into 1/2-inch wide pieces)

Carrots (shredded)

Arugula (bunch, cut into 2-inch pieces)

3 tbsps

Olive Oil

1 tbsp

Balsamic Vinegar

1 tsp

Salt

1 tsp

Black Pepper

Directions:

Combine sweet peppers, cucumber, tomatoes, carrots and arugula in a medium-size bowl

Whisk together oil, vinegar, salt and pepper in a small bowl

Pour dressing over vegetables, tossing to coat
