Ingredients:
2 cups
Shortening1 cup
White Sugar6
Eggs8 cups
All-Purpose Flour7 tsps
Baking Powder2 tbsps
Vanilla Extract1 pinch
Salt2 cups
Whole Milk1810 g
Dried Fig450 g
Raisin2 tsps
Ground Cinnamon1 small
Apple1.5 cups
Pecan (chopped)1 cup
Water (optional)Directions:
1
To Make Dough: Cream sugar and shortening
2
Add eggs, vanilla, and salt
3
Blend in flour and baking powder by hand
4
Knead dough until smooth and workable
5
Add milk to reach workable consistency
6
(This takes a while and you will get a workout, but you'll know when it's right
7
) To Make Filling: Cut up figs, orange, and apple into small pieces
8
(It is easier to grind this way)
9
Grind figs, raisins, orange, and apple
10
If the mixture is too dry or thick, mix in up to 1 cup of water, if desired
11
(I do not use the water, the juice from the apple and orange are enough)
12
The spices and chopped nuts are added to the ground fig mixture
13
After the fig mixture is ground, I sprinkle them in over the mixture and mix (knead) it in by hand
14
STICKY! But good
15
Preheat oven to 375 degrees F (190 degrees C)
16
Roll out some dough
17
(should be kind of thin)
18
Put fig mixture in a line
19
Wrap dough over mixture, sealing figs inside dough
20
Trim to desired length, using a diagonal cut
21
Make small diagonal slits in the sides of the cookies
22
Bake on ungreased cookie sheet for 10-15 minutes
23
(Dough makes good cookies without the filling also)
24
Wonderful with coffee
