Ingredients:

1 tbsp

Kosher Salt

2 large

Egg

Directions:

1

Cut cauliflower into medium-sized florets and process in batches in a food processor

2

For each batch, pulse until pieces break down and continue processing until texture resembles rice grains

3

Transfer to a large pot

4

Sprinkle with kosher salt

5

Cook over medium-high heat, stirring, until mixture is wet and soft, about 30 minutes

6

Reduce heat if it begins to brown

7

Remove from heat and allow cauliflower to cool

8

Transfer cauliflower in batches to a clean cotton towel

9

Bring up sides, twist towel, and squeeze out as much liquid as you can

10

For this recipe, you should have about 3 1/2 cups cooked, squeezed-dry cauliflower

11

Preheat oven to 350 degrees F (175 degrees C)

12

Line a large rectangular baking dish with parchment paper, allowing ends to extend up over the sides for easy lifting

13

Lightly brush parchment with olive oil

14

Crack eggs into a large mixing bowl

15

Add crushed garlic, oregano, pepper, and cayenne pepper; whisk together

16

Transfer cauliflower to mixing bowl

17

Add shredded Cheddar cheese and grated Parmigiano-Reggiano

18

Mix thoroughly

19

Transfer to prepared baking dish

20

Tamp down and smooth out evenly

21

Bake in preheated oven until deeply golden brown, about 1 hour

22

Allow to cool to room temperature

23

Cover and refrigerate until thoroughly chilled, 3 or 4 hours

24

Preheat oven to 400 degrees F

25

Line a baking sheet with a silicone mat; lightly oil the mat

26

Lift cauliflower out of pan

27

Slice in half lengthwise; slice each half crosswise into thin "fries," about 1 inch wide

28

Arrange fries on the mat so they do not touch; brush lightly with olive oil

29

Sprinkle with a dusting of grated Parmigiano-Reggiano cheese

30

Bake in preheated oven until deeply browned, about 20 to 25 minutes

31

Allow to cool slightly before serving
