Ingredients:
2.5 cups
Milk (low-fat 1%)1 cup
Sugar3 tbsps
Cornstarch1 tsp
Salt1 large
Egg1 tsp
Vanilla Extract1 cup
Pineapple (diced peeled)1 cup
Banana (sliced peeled)Directions:

Bring milk to simmer in heavy medium saucepan

Add coconut; remove from heat

Cover and let steep 20 minutes

Transfer to blender; purée until smooth

Whisk sugar, cornstarch and salt in small bowl to blend
