Butter (room temperature)1 tsp
Olive Oil1 cup
Balsamic Vinegar1 cup
Shallot (finely chopped)4 cups
Arugula (lightly packed)2 large

Mix grated cheese and butter in small bowl

Season generously with salt and pepper; set aside

Sprinkle steak generously with salt and pepper
