Vegetable Oil

Coconut Milk

Directions:

In a saucepan, heat oil over medium high heat

Stir in rice and cook for 1 minute

Pour in coconut milk and chicken stock and bring to a boil

Cover and reduce heat to low and simmer for 15 minutes

Remove pan from heat and allow to rest for 5 minutes
