Ingredients:
1 cup
Cornmeal2 tbsps
Olive Oil1.5 cups
Spinach (fresh, lightly packed)2 medium
Tomatoes (diced)1 cup
Sharp Cheddar (grated)1
SaltDirections:
1
Lightly sprinkle work surface with cornmeal or flour
2
Place dough directly in the middle of the work surface
3
Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle
4
Brush both sides with olive oil and set aside until ready to grill
5
If you are grilling on a charcoal grill, set coals on one side of the grill
6
Place dough directly on the cooking grate over medium heat for 1 to 3 minutes, until the crust is well marked and browned
7
Flip dough and spread spinach evenly over cooked side of crust
8
Create a rim around the outer edge of the pizza with the tomato (this will keep the eggs from sliding off the pizza
9
) Sprinkle cheese over the spinach
10
Crack 2 eggs directly in the center of the pizza and top with crumbled bacon
11
Move to indirect heat (for charcoal: the side of charcoal grill that has no coals
12
For gas: turn off burner directly under pizza)
13
Cover grill and cook for about 10 to 15 minutes, or until the eggs are cooked like traditional sunny-side up eggs and the bottom of crust is well browned
14
Season with salt and pepper and serve immediately
