Quarter the apples and remove the seeds and cores

Cover pot and let simmer over low heat for about 30 minutes, or until the apples breakdown to a sauce-like consistency

Remove from the heat, uncover pot, and allow the apples to cool slightly

Gently push the apples through a food mill or wire sieve using a rubber scraper
