Ingredients:
2 cup
Creamy Peanut Butter1 tbsp
Sesame Oil1 cup
Rice1 tbsp
Sugar1 tbsp
Dijon Mustard1 tbsp
Ground Coriander (coarse)2 tbsps
Soy Sauce (naturally brewed)1 cup
Canola Oil1 bunch
Scallions (sliced)Directions:

In a bowl, whisk together the peanut butter, sesame oil, vinegar, chile, sugar, Dijon, coriander and soy until smooth

Whisk in the canola oil and check for seasoning

In a large bowl, toss dressing with the pasta, cucumbers, bell pepper and scallions

Check for seasoning
